Why Pasteurize Nuts?
Certain organisms, such as salmonella, can survive on the surface of a nut for an extended period of time in a dormant state and in fact, recent studies indicate the low moisture conditions actually strengthen the heat resistance and persistence of these organisms. CoolSteam® Blue raw pasteurizes almonds for a 5log+ reduction in pathogens, like Salmonella. CoolSteam® is TERP approved by the Almond Board. The continuous process preheats, pasteurizes, dries, and cools.

CoolSteam® Black
CoolSteam® Black is a fully-integrated system that adds to all the benefits of the CoolSteam Blue Pasteurizer but adds a Precision Roaster and an in-line brining option.
CoolSteam® Black continuously processes utilizing forced-convection technology to pasteurize and roast almonds efficiently.
The integrated briner allows processors to pasteurize, brine, roast, and cool in one fully integrated system. No need for product handling between steps.
