Model FC Bulk/Tray Cooker
The Laitram Model FC Bulk/Tray Cooker utilizes a patented, "forced
convection" process and allows the flexibility to cook shrimp using tray or
bulk-feeding for peeled tail-on, fully peeled, or shell-on shrimp. When bulk-
feeding is necessary, simply roll the feedtank into place and begin operating.
By using the forced convection process, the FC provides:

A lower internal temperature means less overcooking of the outside of the
shrimp when compared to conventional cookers.

Provides a safer product

The product spends more time above the bacteria kill temperature than product
cooked in conventional steam cookers.

Higher Quality product

Less overcooking means more of the natural moisture is retained within the
shrimp resulting in improved texture, taste and appearance.
The cooker comes in several different lengths depending on your overall
capacity needs.
