The Laitram Model CTX Steam Cooker is designed to process shellfish including shell-on/off shrimp, crab, lobster, mussels, and crawfish. This highly efficient, gentle cooking system improves product quality and flavor, increases production capacity and reduces energy costs.

For tray-cooking applications, the Model CTX can also be configured to gently move trays through the cook chamber and into the chiller.
